During last summer vacation, one of our close friend requested us to share some no - cooking kids friendly recipes in my blog. Even though I shared some recipes personally, I was not able to put any of such dishes in my blog. I was so busy with my kids those days. Anyway, this time,  I am planning to share some non-cooking and easy dishes in this platform. Hope this will help you too.



    Sandwiches are one such no cooking dishes and of course, it is kids friendly. We can serve it  them for breakfast, dinner, teatime ...in short at any time. Also, we know it is a very convenient lunch box dish.

    The sandwich is a dish where a piece of meat or cheese is placed between slices of bread. Today, We have an Indian street style sandwich. Here, cheese and thinly sliced vegetables are sandwich between the bread slices along with green chutney.

    The green chutney we used here can be used as dip for many veg and non-veg starters. Here I have used both curd and lemon in order to give a slight sour taste. If your curd is sour then you can omit the lemon.

    Do not make too much watery chutneys. For me, I love to have a thick chutney coating over my bread slices. If you make it too runny, then it will be difficult to spread and also the bread slices will turn mushy. Also, try to use fresh leaves to get the green vibrant color.

    For me, this is so special sandwich because it is my kids all time favorite. They love this for the first time. Today,  I am sharing this is for you. Try and enjoy

    Vegetable and cheese sandwiched between bread slices along with yummy and tasty green chutney
    Preparation time: 10 minutes | Cooking time: 0 minutes | Total time: 10 minutes



    Ingredients



    • 12 to 14 bread slices
    • 6 to 7 cheese slices
    • 1/2 cucumber
    • 2 small tomatoes
    For chutney
    • 1 cup chopped coriander leaves
    • 1/2 cup mint leaves
    • 1" piece ginger
    • 3-4  garlic cloves
    • A pinch of cumin seeds
    • 1/4 lemon
    • A generous pinch of sugar
    • 3/4 cup crud
    • Salt to taste

    Vegetable sandwich with step by step preparation


    Preparation
    1. Wash coriander leaves thoroughly are remove dry leaves if any. Cut and discard its roots and keep aside. It will be better to keep coriander leaves in water for some times before washing. This will help in get rid of any pesticides. 
    2. Wash mint leaves thoroughly with fresh water and separate leaves from stalk and keep aside. You can use younger stems as such.
    3. Remove the skin of garlic and ginger. Discard the stalk of green chili and keep aside
    Making sandwiches
    1. First step, is the preparation of coriander-mint chutney. Put coriander, mint, ginger, garlic, green chilies, cumin seeds and salt in a mixer grinder. Squeeze a few drops of lemon if necessary. 
    2. Pour curd and add a pinch of sugar. The sugar to balance the entire taste of chutney.
    3.  Finally, put a generous pinch of cumin seeds. 
    4. Then grind into a smooth paste. 
    5. Take bread slices and trim the edges. 
    6. Spread coriander-mint chutney. Make sure that your green chutney is not too thick or too runny and also do not use too much chutney on a single slice. The bread will absorb all the moisture and will turn mushy. 
    7. Make a thin layer of cucumber over the mint chutney. Do remember to slice cucumber thinly.
       
    8. Then make a tomato layer over this cucumber layer.
    9. Place cheese slice. If you don't get cheese slice, then you can use grated cheese also.
    10. Then place the second bread slice after apply coriander-mint chutney.
    11. Vegetable sandwich is ready. Serve and enjoy
