    • 2 springs of curry leaves
    • 1 cup thin coconut milk or 1 cup water
    • 1/2 to 3/4 cup thick coconut milk
    • 1 tablespoon coconut oil
    • 1/4 teaspoon garam masala
    • Salt as needed
    Instructions:
    1. Place vegetables, whole spices, cashews, and raisins in a pressure cooker.
    2. Add enough salt and water (or thin coconut milk).
    3. Pressure cook for one whistle on high flame.
    4. After the first whistle, switch off the flame and wait till the pressure settles down.
    5. Mash the veggies slightly with a potato masher. The veggies should not be mashed fully.
    6. Cook again on high flame, till extra gravy evaporates and the veggies come to a semi-dry consistency. Keep an eye on it, as there is a high chance of burning.
    7. When the gravy thickens and comes to a semi-dry consistency, add thick coconut milk.
    8. After adding the thick milk, switch off the flame when the first boil starts. Do not boil the gravy further, as the coconut milk might curdle.

    10. Mix well and cover with a lid. Set aside for five to ten minutes so that all the flavors diffuse into the gravy beautifully.
