Chicken fried rice or fried rice is a well-known Indo-Chinese dish served in Indian Restaurants. The fried rice served in Indian restaurants are not exactly the typical Chinese dish, but have adapted the recipe and made some variations to suite Indian taste buds. Anyways, as we all know, this is a fast moving and highly demanding restaurant dish. Making fried rice at home is also an easy task. Let us learn today, how to make chicken fried rice at home without using any taste makers.

    Chicken fried rice is a famous Chinese restaurant dish which is made by sautéing the rice over high heat with vegetables, chicken and sauces. Each fried rice we taste from each restaurant will convey different taste, smell and color. This may be due to the difference in ingredients (or different brands) they use.

    Chicken fried rice is a dish which our kids always love to have. But buying regularly from the restaurants may cause health problems. Most of the restaurant bought Chinese dishes normally contains some taste stimulators like Ajinomoto or MSC (monosodium glutamate). Taking Ajinomoto regularly can lead to various issues like a burning sensation in the neck and face, tingling, etc. So better to avoid regular consumption of Ajinomoto containing foods.

    Yes, of course we can make chicken fried rice healthy. Just load with lots of veggies and protein and limit the amount of oil.

    • The texture of chicken fried rice comes from the perfection in cooking the rice and veggies. The rice should be cooked only 90%, which means there should leave a slight bite after cooking, It should be drained and cooled properly before use. 
    • While cooking the veggies, the veggies should not loss its crunchiness. 
    • Sautéing over high flame is another key point. Try to toss the rice rather than sautéing with spoon.
    • The color of the fried rice depends on the type of sauce you use. If you use dark soy sauce instead of light, then the fried rice will also have a darker shade.

    Normally, chicken fried rice is served with tomato sauce or chili sauce in the restaurants. But the fried rice with chili chicken is one my favorite combo.

    Rice tossed in chicken, veggies and sauces

    Preparation time: 45 minutes | Cooking time: 10 minutes | Total time: 50 minutes

    Ingredients

    • 1.5 cups basmati rice
    • 1 chicken breast (200 gm), cubed
    • 1 small carrot finely chopped or julienne ()
    • 3 beans, deveined and finely chopped
    • 2 spring onion bulbs, peeled and finely chopped
    • Handful of spring onion greens
    • 1.5 tbsp light soy sauce
    • 1/2 tsp pepper powder + Pepper powder to taste
    • 1 tsp corn flour + 1 tsp all purpose flour (optional)
    • 1/2 tbsp ginger, peeled and finely chopped
    • 1/2 tbsp garlic, peeled and finely chopped
    • Salt to taste

    Preparation of chicken fried rice with step by step photos





    Step 1 : Cooking the rice

    1. To make the fried rice, I used long grain basmati rice. But you can try with any odorless white rice. Take the rice in a bowl.
    2. Pour enough water for soaking. Make sure the water level is at least one inch above the rice level. Let it rest for next twenty to thirty minutes. After thirty minutes, wash the rice two to three times in tap water, drain and set aside.

    3. Meanwhile, take almost eight cups of water in a pot. Put a pinch of salt. The addition of salt is actually optional. I usually add to get the rice properly seasoned.

    4. When the water comes to a rolling oil, put the rice.

       
    5. Let it cook over a high flame or medium flame (adjust to your convenience) till the rice became al dente.

    6. Drain through a colander.

    7. Immediately, separate the rice with a fork or spoon gently or without breaking the rice grains.

    8. Once all the water drained, spread it on a plate and let it cool down completely.

    Step 2 : Preparation of chicken

    1. Take chicken in a bowl, the chicken should be washed properly and cubed into bite sized pieces.

    2. Put half teaspoon pepper powder and salt to taste. 

    3. Mix well and set aside for thirty minutes.

    4. After thirty minutes, add one teaspoon maida and one teaspoon cornflour. These two ingredients are just for binding. These two are optional ingredients.

    5.  Heat olive oil or sunflower oil in a pan. Put the chicken pieces, one by one.

    6. Flip when one side comes to a nice golden color and cook the other side also. When done, transfer to another bowl and set aside.

    Step 3: Preparation of fried rice
    1. In the same pan, sauté half tablespoons ginger and half tablespoons garlic till aromatic. 

    2. When the ginger and garlic turns aromatic, add  spring onion bulbs, carrot and beans and cabbages.  

    3. Sauté for one minute. Never over cook the veggies. If using a big pan you can do the next step in the same pan itself otherwise transfer the veggies to a bowl.

    4. Meanwhile, break two eggs in a bowl. 

    5. Put pepper powder and salt to taste. 

    6. Mix well.

    7. Add this egg into the pan and mix vigorously with a spoon.

    8. so that we get beautiful scrambled eggs. Transfer to a bowl and set aside.

    9. Now add the cooked veggies, soy sauce and salt if needed.

    10. Put the cooked and cooled rice, chicken, scrambled eggs, handful of spring onion greens and a few drops of white vinegar.

    11. Toss the rice till all the ingredients mixed together. All the cooking should be done over high flame.

    12. Enjoy.
