Donuts are basically the baked or deep fried leavened breads with different toppings. Regular bread dough with mild changes can be used for making the donuts. It is the one that my daughter love the most. She always asks me to make this sweet little treat for her. While making the doughnut for home purpose, I never compromise with the ingredients, taste and flavor. I always try to make the best taste. This same donut recipe can also be prepared by baking and deep frying. 



    Donuts are normally prepared with all purpose flour, sugar and yeast. Yeast is used as a leavening agent. Proper kneading and proofing with an adequate proportion of ingredients make the donut soft and tasty. Just like any other fermenting stuffs, donut also demands fresh active yeast and adequate temperature. 


    Donuts - Experts Tips

    • Just like any other leavened food items, this donut recipe also calls for fresh and room temperature ingredients. 
    • Climate also affects the fermentation time. Try this recipe in hot climates for faster fermentation.
    • This recipe contains eggs, the amount of liquid content in the egg determine how much milk should be used for making the dough. I used one medium sized Indian eggs, which weight around 52 grams with shell.
    • Proper kneading make the donut bread perfect and soft. Knead well and give enough leavening time.
    • Frying on high temperature will leave the donuts dark on outside and moist and undercooked dough inside.  So Keep and eye on the temperature and remember flip two to three times in between to get even browning.
    • I used simple chocolate topping in this recipe. While melting the chocolate, make sure the knife, chopping board and the bowl are free of dust and water. If you are using butter, use melted butter or room temperature butter only.

    Ingredients


    For the dough

    • 2 cup maida (250 gm)
    • 1/4 cup milk powder
    • 2 tbsp powdered sugar
    • Salt to taste
    • 1/2 tbsp instant yeast
    • 2 tbsp butter
    • 1 egg
    • Room temperature milk as needed
    For the topping
    • 100 gm dark chocolate
    • 1 tbsp room temperature butter (optional)

    Step 1: Preparation of dough

    1. Take all purpose flour, milk powder, powdered sugar, salt and instant yeast in a mixing bowl.

    2. Mix well and make a well in the center.

    3. Pour melted ghee.

    4. Break one egg.

    5. Mix well with your hands until you get a breadcrumb like consistency.

    6. Pour milk little by little.

       
    7. Mix well with your hands and make a loose and sticky dough.

    Step 2 : Kneading
    1. Dust the table top with maida and knead the donut dough.

    2. Once you get a smooth, elastic and non-sticky dough, you can stop kneading.

    3. Place the dough in a greased bowl. Brush some oil or butter on the dough.

    4. Cover with a wet towel and let it rest for at least two hours or until the dough reaches double in volume. 

    5. After the resting time, the dough should be double in size and beautifully aerated.



    6. Punch the dough first to release the trapped air and then knead again gently.

    7. Cut into eight equal pieces.

    8. In this recipe, I haven't used any mould to shape the doughnuts. I just made small balls out of the each portion, slightly pressed between my hands and then with a nozzle made the center hole.  If you are having a donut cutter -align: center;">

  • Cover with a wet towel.

    1. Let it rest for the next thirty to one hour or unless it double its volume.


      Step 3 : Frying

      1. Fry in hot oil over slow flame. Deep frying is best to attain uniform color. 

      2. Flip two to three times in between and fry till the donuts are golden brown in color. 

      3. Place the fried donut on a wire rack and wait till it come to room temperature. 

      Step 4 : Topping

      1. I used dark chocolate for topping. First, finely chopped the chocolate with a neat and dry knife.

      2. Then melted the chocolate in double boiling method. 

      3. When melts and turn moist, stir with a spatula. You can add some melted butter to improve the taste.

      4. Then dipped the top portion in chocolate.

      5. Finally made fine lines with white chocolate and garnished with sprinkles.

      6. Enjoy.
