Today, I will be sharing the easiest and quickest egg dosa recipe.  Serve immediately after preparation with any hot chutney.

    Making mutta dosa is an easy task especially when you have dosa batter ready. Make one thin round crape with dosa batter, crackle eggs, put spices and salt, mix well and spread it all over the crape. Flip and cook the top portion also.

    1. Thin and crisp dosa gives better taste for egg dosa. 
    2. Before the addition of the topping, do reduce the flame to low to ensure proper cooking.
    3. Spices are upto your taste, adjust it.

    Mutta dosa is normally served with spicy chili chutney or coconut chutney. You can also use sambar or dal as accompaniments.

    Ingredients

    • 1 cup dosa batter
    • 2 eggs
    • 1tbsp finely chopped onion
    • 1 tbsp finely chopped tomatoes
    • 1 teaspoon green chillies/ pepper powder/ red chilli powder
    • 1 tbsp coriander leaves
    • Salt a pinch

    1. On a hot and greased dosa griddle, pour the dosa batter. 

    2. Make thin crepes by rotating the spoon clockwise.

    3. When the dosa batter cooked to perfection, pour one teaspoon of coconut oil or gingelly oil. You use ghee also.

    4. Reduce the flame to low and break two eggs.

    5. Further put salt just enough for the egg (or a pinch), finely chopped onions and tomatoes.

    6. Then green chilies to taste. You can also use pepper powder or red chili powder instead of green chilies. Do remember to adjust to your tolerance.

    7. Add a few finely chopped coriander leaves.

    8. Now it is the time of quick mixing. With the help of a spoon or fork carefully mix the ingredients together and evenly spread it all over the dosa. Wait for the next 30 seconds.

       
    9. Flip the dosa using a spatula without spilling the egg mix.

    10. Increase the flame to high and cook the dosa for next 30 seconds. After 30 seconds you can save the hot and spicy egg dosa with chutney and sambar.
