They have a very short shelf life and do not hold their shape for a long time in a hot climate. So in India dairy creams are not very popular in cake decoration. But I remember one excusive bakery in Mangalore who use only dairy cream for their cakes. Those cakes were absolutely delicious and I never had such smooth and yummy cakes there after.


    Non-dairy whipped cream

     Non-dairy whipping cream or dairy free whipping cream is an oil-water emulsion. Veggie protein, water, stabilizers and oil are its main components. These are cost effective, easy to handle and withstand higher temperature conditions. Tropolite, vivo, Fiona, Starwip are some non-dairy whipping cream brands.


    Whipping Cream - How To Store


    The whipping cream should be kept in a deep freezer to keep it fresh for a longer period. New packets will remain fresh for up to one year in deep freezer. Once you opened the pack, seal the packet tightly with a tape and deep freeze it. It is better to use the opened packets within a six months period. 


    How to Whip Cream

    To whip the cream, you will need a hand whisk, electric whisk or a stand mixer. Pour the chilled heavy whipping cream in an ice cold mixing bowl and whisk it till stiff peaks. It will be better slowly by increasing the speed of your beater at every one minute.

    1. Begin by putting your whisk and mixing bowl in the freezer for at least thirty minutes. This is very important to achieve the increased volume of whipped cream in short time.
    2. Unfreeze the cream before use. Make sure the cream is chilled but in liquid form. 
    3. Start whipping on low speed, increase the speed of the whisk every one minute. As soon as you reached speed 3, continue beating till stiff peaks are formed. It may take only 4 minutes.

    2. Place the mixing bowl in it. This will help to maintain the temperature while beating.

    3. Pour chilled whipping cream. 
    4. Beat at speed one for one minute. Increase the speed of your electric beater at every one minute.

    5. Continue beating at speed 3 until you reach stiff peeks.

    6. Use whenever necessary.
