    What is a Kappalandi Mittai?

    Kappalandi mittai is a brittle Indian sweet made with jaggery, peanut and nuts. It is also called kadala mittai in some parts of Kerala. It is available in all most all the Indian sweet shops and called by different names in different languages. This delicious candy is called gajak in Hindi and chikki in Marathi.  

    The preparation of Indian peanut candy is very simple. If you all ready have roasted peanuts with you, this mouth watering candy will be ready in just twenty minutes. The only thing you to remember is to get the jaggery syrup consistency right

    Peanut chikki - Expert's tips


    1. The type of jaggery used in peanut chikki preparation determines the color and taste of the candy. If you can,  try to get brown or black jaggery. The peanut chikki will look perfect. 
    2. Make sure the jaggery has reached a hard ball consistency before the addition of peanuts. This will ensure perfect crunchiness and longer shelf life. 
    3. I have roasted and peeled the peanuts in a wok before making the chikki. If using store bought roasted peanuts, make sure the peanuts are fresh and crunchy. If not, roast it in a kadai or microwave it before use.
    4. The prepared candy will be soft in the beginning. Mould and cut into desired shape when the candy is still warm.

    Indian traditional candy with peanuts


    Preparation time: 15 minutes| Cooking time: 20 minutes | Total time: 35 minutes





    Ingredients


    • 200 gm or 1.5 cups peanuts
    • 200 g brown or black jaggery
    • 1/2 teaspoon ghee





    Kappalandi mittai preparation with step by step photos



    1. Heat a thick bottomed wok over high flame. When the wok turns hot, put 1.5 cups of peanuts. 

    2. Reduce the flame to low and roast the peanuts with time to time stirring. 

    3. Let it cook slowly over low flame till turn crisp and attain a dark shade in its skin. You will hear crackling sounds at this stage.

    4. Transfer the peanuts into a dry bowl or plate. Let it cool down.

    5. When the peanuts come to room temperature, remove its skin by rubbing them between your hands. 

    6. Discard its skin and collect the peanuts only. 

    7. Use a dry glass or mortar and gently roll it over the peanut in order to halve them. Then set aside.

    8. Further, in a wok, melt jaggery with  one tablespoon water. The water will facilitate the melting. Always keep the flame low or medium.

    9. As soon as the jaggery melts fully, add half teaspoon ghee and mix well.

    10. When the jaggery comes to a thick and bubbling consistency, check for hard ball consistency.

    11.  Put one drop of melted jaggery in cold water, if it forms hard ball, then you reached the desired consistency.

    12. Add the peanuts. 

    13. Mix immediately. Make sure the jaggery syrup coat the peanuts well. Switch off the flame.

    14. Transfer into a butter paper or a greased tray.

    15. Put another butter paper on top and roll it with a chapati roller to level it. Make thin or thick chikkies as you prefer.

    16. Allow to cool slightly and make cuts when still warm.

    17. When the peanuts chikki cool completely, store in an airtight container and munch when ever you want.
