Masala dosa or Masala dose is a well-known South Indian breakfast dish. It is suppose to be originated in Karnataka, but now a days, it became a regular dish of  almost all states of South India. The rice crapes or dose will be stuffed with a potato based savory filling. Let's us discuss the preparation of South Indian Masala Dosa in details. 




    What is Masala Dose?


    Masala dosa is a variation of regular South Indian dosa. It is one of the most popular breakfast dishes served in South Indian restaurants and tiffin centers. Each and every house of South India has their own recipe of Masala dosa.


    Preparation of Masala dosa includes three different steps. The dosa batter preparation, the filling preparation and stuffing. The outer thin crapes of masala dosa are made with fermented rice and lentil batter. The taste and flavor of the filling can be different depending on the ingredients. The basic and traditional masala dose uses spicy onion and potato filling, which we are going to discuss today. This is the most commonly served masala dosa recipe in South India.

    1. Masala dose needs a thin and crisp crape. It happens only when the batter is at the right consistency and properly fermented.
    2. The filling will be thick but moist. The potato and onion are seasoned in a typical south Indian way using mustard, curry leaves and lentils.
    3. The taste of the filling determines the taste of masala dosa.

    In South Indian restaurants, masala dosa is normally served with coconut chutney, coriander chutney and sambar.  But you can serve dosa with any type of spicy coconut chutney.

    Rice crapes with savory stuffing

    Preparation time: 10 minutes | Cooking time: 20 minutes | Total time: 30 minutes





    Ingredients


    • 4 cups of dosa batter 
    • 2 medium sized potato, boiled and mashed
    • 1/2 cup or one medium sized onion, peeled and finely chopped
    • 2 to 3 (1 tsp) green chili, finely chopped
    • 1 tsp ginger, peeled and finely chopped
    • 5 to 6 garlic cloves, peeled and finely chopped
    • 1 spring curry leaves
    • 2 tbsp coriander leaves
    • 1 tsp split Bengal gram (chana dal / kadalaparippu)
    • 1 tsp split black gram (urad dal / uzhunnu parippu)
    • 1 tsp mustard seeds
    • 3 tablespoons of ghee
    • 1/4 cup ghee
    • Salt to taste
    • 1/4 cup water



     Masala Dosa Preparation With Step By Step Photos


    1. In a thick bottomed kadai, boil 3 tbsps of oil. When the oil turns hot, put 1 tsp mustard seeds. Let the mustard seeds crackle.

    2. As soon as the crackling sound stops, put 1 tsp Bengal gram and 1 tsp black gram. Also put 1 spring of curry leaves.

    3. Sauté over medium flame till the lentils slightly change its color. Further put chopped onion, ginger, garlic and green chilies.

    4. Sauté till the onion turns translucent.
    5. Put mashed potato and salt to taste. Mix well.

    6. Pour 1/4 cup water and mix well. 

    7. As soon as the mix again comes to a semi dry consistency, add 2 tbsp coriander leaves, chopped. Switch off the flame and set aside.

    8. Meanwhile, put salt in the dosa batter and mix well.

    9. Heat dosa griddle over high heat, grease properly. Reduce the flame and pour one spoon full of dosa batter and spread evenly.

    10. Put one teaspoon ghee and let the dosa cook fully.

    11. As soon as the dose cooked and start browning, put the prepared potato filling at one end.

    12. Fold and close the dosa with a spatula. 

    13. Serve hot with coconut chutney and sambar.
