Ingredients
- 200 gm fresh beans, trimmed
- 150 gm ripe tomatoes
- 4 garlic cloves, peeled and sliced
- 1 onion, peeled and finely chopped
- A few basil leaves
- Pepper powder to taste
- Salt to taste
- 2 tbsp olive oil

- I used 200 gm fresh and young green beans (French beans) to prepare fagiolini al pomodoro. Before using the beans, properly wash them to remove any dirt or debris, and soak them in fresh water for a few minutes to eliminate pesticides and other contaminants. I also trimmed both ends of the beans, and if using mature French beans, remove the threads as well.
- We can now proceed, once all the beans are trimmed. We'll start by boiling the beans in gently salted water until they're soft. In a small sauce pan, combine almost three cups of water and a pinch of salt. Allow it to boil over high heat.
- We can add the French beans once the water has reached a rolling boil.
- Over medium heat, cook the beans until they are tender. You are free to prepare them to your liking. Overcooked French beans do not appeal to me; I prefer a sight bite. So when they're almost done, I turned off the heat.
- Strain the French beans once they've softened and set them aside. This procedure ensure that the French beans are cooked evenly, but there is one drawback, some nutrients leak into the water while cooking. You may either use this water in other dishes or to make soup with it. I will never suggest you to throw away this nutrient dense water. Otherwise, you can skip this step entirely and may boil the French beans in the chunky tomato sauce.
- Then, over high heat, heat one pan. Reduce the flame to medium and pour 2 tablespoons of olive oil into the pan after it has heated up.
- After the oil has heated up, add three to four chopped garlic cloves. Sauté them till they became fragrant.
- Sauté one small onion, finely diced, till transparent.
- After that, add 150 gm of red and ripe tomatoes to the pan. One medium and one small tomatoes were used.
- Season with salt. If available, add the Italian basil leaves at this point. It adds a lots of flavor to the meal, similar to how curry leaves and coriander leaves are used in Indian cookery.
- Mix well, then cover with the lid and cook on low heat until the tomatoes are mushy.
- Cover the pan with a lid and cook over low heat until the tomatoes are tender and the sauce has thickened into a chunky consistency.
- Add pepper powder to taste and mix well.
- The cooked French beans can now be added. Mix well and cook covered for a while to allow the flavors to fully saturate the beans.
- Enjoy hot with any bread of your choice.
