Rich Sponge Cake Using Eggs

Why don't we start baking today.  Cake baking is a tricky process. If the ingredients are not in right proportion or the temperature is incorrect, the baking may end up in disaster. Today,  will share a basic cake recipe, the sponge cake which forms base of many dishes like pastries and cakes. If you are comfortable with this cake, you can easily bake chocolate and other complex cakes.
The important thing for a perfect cake  is that the quantity of ingredients should be adequate and everything should be at room temperature.
Sponge cakes are sometimes prepared without baking powder, in that case egg itself function as a leavening agent. But this cake is with baking powder. OK,let us start..................


 Rich sponge cake recipe

Ingredients

  • 170 gm self raising flour or maida
  • 170 gm butter or margarine
  • 170 gm powdered sugar
  • 3 large eggs
  • 1/3 cup milk 
  • 1 teaspoon vanilla essence

Preparations for rich sponge cake

    1. All the ingredients should be kept at room temperature before you start baking. 
    2. Measure everything in required amount and keep in separate bowls. 
    3. Take 8'' round cake tins. Apply an even layer of very soft butter on the bottom and sides of your cake pan. Also dust flour on the bottom and sides of the cake tin. Line with the prepared round of parchment paper, smoothing out to remove any creases or air bubbles. Brush another layer of butter over the parchment paper.

          Direction of preparation of rich sponge cake

          1. With an electric mixer fitted with a wire whip, beat the eggs and powdered sugar on medium-high speed in a large mixing bowl until the mixture is pale yellow, thick, and creamy.
          2. Add vanilla extract and mix well.
          3. Then add the egg one at a time, beating each time thoroughly. If the mixture curdles while adding the eggs, add a little flour before adding the next egg.
          4. Finally, fold in the flour and add milk until the batter has dropping consistency.
          5. Pour the mixture into the prepared round baking pan and level it,
          6. Bake in a pre-heated oven at 200°C (400 F) for 25 to 30 minutes.
          7. Use aside to cool and use as required.

                    1. The ingredients should be at room temperature. 
                    2. Take the exact amount of materials as described above.
                    3. The cake tin should be greased and dusted well in order to avoid sticking of the cake.
