Soft and fluffy spicy omelette Indian style



Soft and fluffy omelette with step by step photos and videos. 

Here is a delicious omelette with herbs and spices. An omelette is a quick and nutritious dish made by frying beaten eggs topped with some herbs, veggies, etc. It is served worldwide as a quick healthy meal along with some white or brown breads. But we Indian considers it as a side dish rather than a quick breakfast. During school time, it was one of the most liked lunch box dish for me and my friends.

Today's dish is not that traditional omelette, but it is something different, soft and fluffy with some nice outer brown crust. Making a fluffy omelette is not as easy as you think, it needs a little bit of patience. I took a few attempts to correct this recipe. Every time, I feel some problem with it. Anyways, finally I got a dish which I can share with you friends. But, yeah, definitely , each failure taught us some beautiful lessons.

So making the omelette fluffier, we need to beat it. You can use a fork, a hand blender or an electric blender of your choice. I used my electric blender for this purpose as it is easier and does take only four to five minutes to get the foam. Now we should take care to keep this form throughout cooking. To do that, 
  • I cooked in butter, because the butter keeps the foam intact throughout cooking. I tried with oil also, but the fantastic result is with butter only.
  • Then do not cover the pan unless the omelette is almost done. In the beginning, I used to cover the pan to aid fast cooking, but it breaks the air bubbles and made my omelettes flat. But you still have to cover the pan in order to cook the upper portion of the omelette, but do that only when the omelette is almost cooked and that's too for one or two minutes. 
  • Flipping the omelette also kills the foam. So do not flip to cook the upper part, just cover it for a few minutes and transfer to the plate immediately. 
  • Always try to keep the omelette on low flame to avoid the formation of a hard crust underneath.  
  • The size of the pan also determines the height of omelette. So choose the pan accordingly.


This is an amazing dish, keep soft for a longer time and excellent for kids lunch boxes. So try this and enjoy.

Ingredients


  • 4 eggs
  • 1/4 teaspoon ginger paste
  • 1 teaspoon chopped green chilies
  • 1 teaspoon chopped curry leaves
  • 1 tsp chopped coriander leaves
  • 1 tablespoon chopped onion
  • A pinch of red chili powder
  • Salt to taste
  • Butter as needed

Direction of preparation of fluffy omelette


  1. In a neat and clean mixing bowl, take four eggs. Put some salt and pepper powder. Be careful with salt, it should not overwhelm the other ingredients. 
  2. With a hand / electric beater, beat the egg till triple in volume. You will see a pale yellow colour along with thick forms. Do not keep this aside for a long time. The form will separate from the egg yolk and this will affect the texture of the omelette. 
  3. Meanwhile, heat a pan on high flame. Once hot, put the flame on low to medium and heat a tablespoon of butter. 
  4. Pour the egg mixture before the form of butter vanish and make sure that your egg mixture is not separated. If so, beat again till they combined well.
  5. Keep the flame on low and wait for two minutes and then spread some grated ginger or ginger paste followed by finely chopped green chilies, onion, curry leaves, coriander leaves and a pinch of red chili powder. 
  6.  Wait till partially cooked. The sides of  the omelette will stretch inwards and then put a piece of butter underneath with a spoon after carefully lifting the sides with a spatula. This step should be done only after the sides of the omelette cook completely. Otherwise, the foam will be disturbed and it will stick on the spatula. 
  7. Cover with a lid and  cook for one or two minutes till the upper portion also cooked. Do not keep the lid for a long time, this will affect the fluffiness of the omelette.  Do not keep the flame on high, it will burn the lower side of the omelette leaving the upper portion undercooked.
  8. After one or two minutes, open the lid and transfer to a plate.
     
  9. Then serve immediately before it loses its fluffiness.


    Some suggetions

    1. If you are using lesser number of eggs, then use small pan to get nice fluffiness. 
    2. Do not keep the pan on high flame. The lower portion will turn brown quickly, leaving the upper side under cooked.
