Spaghetti or noodles a favorite dish of many especially for kids.  Usually, when we crave for noodles, we either order from the restaurants or use ready to cook noodle packets. Why can't  just make at home.  Yes, today, we will have a beautiful, tasty and kid friendly restaurant quality dish with minimal ingredients.  


    What is spaghetti?

    Spaghetti is an Italian pasta made with wheat flour. It is now readily available in Indian supermarkets. You can use any brand of good quality spaghetti. 

    Spaghetti has an identical structure and shape of a long vermicelli. It looks like a dark yellow and thicker version of vermicelli. I think vermicelli is the best option to explain this pasta for beginners. 

    Spaghetti is an Italian pasta, it is thick, solid, cylindrical and comes in at a length between 20 to 30 centimeters. When cooked, it turns soft and resembles like noodles. 

    How to Cook Spaghetti?

    Spaghetti are usually cooked in plenty of water till it turns al dente. Al dente means to the tooth or to the bite. In other words the spaghetti is cooked till soft but should still remain firm. In the same way, we cook basmati rice for dum biriyani. The rice will not be cooked fully, we always leave a slight bite in it so that it comes in perfect consistency at the end. Usually cooking time of spaghetti will be printed on the packet itself. Usually it comes between ten to twelve minutes. 

    Tips for spaghetti pasta 

    1. Do not over cook the pasta.
    2. Sauces contain enough salt, extra salt is not necessary.
    3. Adjust chili flakes to your taste.

    Spicy and aromatic spaghetti we are going to prepare today, actually  doesn't need any accompaniments. If you like, you can try with some salads. 

    How To Make Spicy and Tasty Spaghetti At Home?

    Making spaghetti is quite simple. Spaghetti is first cooked till al dente and then Sautee with freshly prepared butter garlic sauce. Finally, seasoned with garlic oil and cheese. A really a fantastic dish and I got this recipe from one magazine cuttings. I altered the recipe to my taste, try this at home, you will surely like it. Ingredients and step by step tutorial is given below.

    Spicy spaghetti pasta recipe

    Preparation time: 5 minutes | Cooking time: 15 minutes | Total time:20 minutes


    To cook spaghetti

    • 200 gm spaghetti
    • 8 cups of water
    • A generous pinch of salt
    For Butter garlic sauce
    • 2 1/2 tbsp dark soya sauce
    • 2  1/2 tbsp oyster sauce
    • 2 tbsps. of chilly flakes
    • 25 gm unsalted butter
    • 2 spring onion bulbs, chopped
    For garlic oil
    • 3 tbsps of extra virgin olive oil
    • 6 garlic cloves, chopped
    other ingredients
    • Mozzarella cheese (any cheese available)
    • Spring onion greens

    1. Let us boil water in a pan. You can put some salt if you like. I usually put a pinch of salt while cooking the pasta.

    2. When water comes to a rolling boil, put spaghetti. 

    3. The dried spaghetti is a stiff pasta. When it comes in contact with the boiling water, it becomes soften and slowly whole pasta immerse into the water.

    4. When the pasta is al dente, switch off the flame and set aside.

    5.  Meanwhile, let us prepare the pasta sauce. Heat butter in a wok.

    6. When the butter melts, put finely chopped spring onion bulbs, sauté over high heat till the onion turns soft.

    7. Further put oyster sauce, soya sauce and chili flakes, mix well.

    8. When the sauces start to sizzle, pour one 1/2 cup boiling water or pasta cooking water. 

    9. Let the sauce come to a rolling boil. 

    10. Put the cooked spaghetti.

    11. Then toss well and switch off the flame.

    12. Put some mozzarella cheese and handful of spring onion greens.

    13. To prepare the garlic oil, heat oil in a kadai. I used olive oil. 

    14. When the oil turns hot, put garlic and sauté till the garlic turns aromatic and crisp. Switch off the flame and immediately transfer into a small bowl. 

    15. Transfer the prepared spaghetti to a plate, top with some cheese and spring onion greens, sprinkle the garlic flakes and oil. 

    16. Enjoy.
