    Nutty caramel pudding is a caramel flavored and egg based dessert. It has a smooth melt in the mouth pudding layer on the bottom.  Caramelized nuts, cherries and sugar glasses are used for topping. It is a no bake pudding recipe.


    Is caramel custard and nutty caramel pudding are same?


    Caramel custard and nutty caramel pudding are two different desserts, but both uses milk, egg, sugar and vanilla as the key ingredients. Caramel is one of the main ingredients in both recipes. 


    When we talk about the difference, we should know the difference between a custard and a pudding. While making a custard, egg is used for thickening. Recall our caramel custard recipe, the egg mixed with moderately sweet milk, is poured over the beautiful caramel layer and is then baked or steamed to thicken the custard. 



    But when we make a pudding, egg can be a used a major ingredient, but it is not meant for thickening. To thicken the pudding we have to use some additional thickening agents like cornflour, agar agar or gelatin. These recipes normally set without baking. Most of the pudding recipes are no bake dishes i.e., we can make them on stove top. 


    In today's recipe also, the egg is one of the major ingredients. It is used for texture formation, but not for thickening the pudding. Here .We use gelatin as the thickening agent. Caramel gives a color and flavor to our pudding where as vanilla extract used to reduce the eggy smell.

     


    How to Make nutty caramel pudding


    Preparation of the nutty caramel pudding is an easy task. Within ten minutes, you can make the lower custard layer. Caramel, butter and milk are its main ingredients. Eggs and gelatin is used for thickening and vanilla essence as the flavoring agent. But the flavor, not only come from the vanilla but also from the caramel. This is a no bake pudding recipe.


    Nutty Caramel Pudding - Experts tips


    1. Caramelization is one of the key steps in this pudding recipe. Caramel is used to get  color, taste and flavor to our pudding. Making a perfect caramel is one of the most important steps in this dessert preparation. If the caramel left unattended, it will burn and will leave a bitter taste in our pudding and the pudding will get a darker shade also. Always keep an eye on the caramelization process. Once the sugar melts, reduce the flame to low or medium and add milk immediately to stop the caramelization process. This is a crucial step in this pudding preparation, if the caramel doesn't come out right, then the pudding won't taste good. 
    2. While making the caramel milk, make sure the butter is at room temperature. Otherwise the caramel will crystallize and spoiling the whole efforts.
    3.  Gelatin in the main thickening agent in this recipe. Remember to soak gelatin in water before use. If you directly put the gelatin in hot milk, it will stick together and won't dissolve.
    4. For topping, I used cashews. You can replace it with peanuts, almonds, walnuts, etc.

    Caramel Flavored Custard With Crunchy Topping

    Preparation time: 1 hour | Cooking time: 15 minutes | Total time: 1 hour 15 minutes


    Ingredients


    For pudding

    • 14 gm gelatin
    • 1/2 cup water
    • 300 ml ( 1 1/4 cups) milk
    • 30 gm sugar (2 1/3 tbsp)
    • 30 gm butter
    • 2 eggs
    • 60 gm powdered sugar
    • 1 tsp vanilla extract

    For topping

    • 8 - 10 cashews, chopped
    • 2 tbsp sugar
    • 1 tbsp water
    • 1 tbsp ghee
    • 6 cherries
    • A few mint leaves
    • Sugar glass pieces

    Nutty Caramel Pudding Recipe With Step By Step Photos

    There are so many steps in this pudding preparation, but whole process, we can do within twenty to thirty minutes excluding the pudding setting time.

    Step 1: Soaking

    In the nutty caramel pudding recipe, we use gelatin as the thickening agent. At least ten minutes before you start the pudding preparation, do remember to soak gelatin.

    1. Take 14 grams of gelatin in a small bowl. 

    2. Pour half cup of water and set aside. The water will hydrate the protein network in the gelatin so that it dissolve easily. If you put gelatin directly in hot milk, it will stick together and will form lumps. 


    Step 2 : Boling milk
    1. In a neat and clean saucepan, pour 300 ml (i.e. 1.25 cups) milk. I used regular thin milk. Keep the pan over high flame.

    2. When the milk boils, switch off the flame and set aside.


    Step 3: Preparation of caramel flavored milk

    Start this step immediately after boiling the milk. Do not chill the milk and allow the milk to cool down.
    1. Once you have boiled the milk, place one thick bottomed pan over medium heat. Put 30 gm sugar and 1.5 tbsp water. Addition of water will help in easy handling. 

    2. Once the sugar melts and attains a light brown color on the sides, reduce the flame to low and mix well. 

    3. Further caramelization will be very fast, so it will be better to reduce the flame to low at this stage. 


    4. As soon as the sugar comes to a beautiful light golden yellow color, put 30 gm butter. Never wait till caramel turn dark. The butter should be at room temperature. (See tips above). 
    5. Pour boiled milk and mix well.

    6. Once the caramel dissolves completely in the milk, switch off the flame and set aside.


    Step 4: Separating eggs

    1. We need two eggs for this recipe. Take two medium size eggs (approximately 50 - 52 grams with shell).

    2. Separate the egg whites and yolk carefully.

    3. Keep them in two separate neat and dry bowls.


    Step 5 : Preparation of egg yolks
    1. Put 60 grams of powdered sugar in the separated egg yolks.

    2.  Beat well with a fork or a hand whisk so that the powdered sugar dissolves in egg yolk. 

    3. Add half portion of the prepared caramelized milk and mix well.

    4. Transfer this milk, egg and sugar mix in a saucepan.

    5. Cook on medium flame with continuous stirring till the mix coat the spoon thinly. You will able to draw a line on the spoon with your finger.

    6. Add remaining milk and mix well. 


    Step 6: Preparation and addition of gelatin
    1. Place the soaked gelatin in a bowl with hot boiling water. 

    2. Stir with a spoon, carefully till the gelatin dissolves. 

    3. Add this dissolved gelatin in the prepared hot caramelized milk and mix well. Set aside so that it cool a bit.


    Step 7: Incorporating egg whites

    1. Next beat egg whites using an electric whisk. While beating the egg whites, the blades and the bowl should be dry and water free. 

    2. Once you get soft peeks, you can stop beating.

    3. Transfer the caramelized milk into a bowl and pour one teaspoon vanilla extract.

    4. Put the prepared egg whites  in the prepared pudding mix.

    5. Then, with the cut and fold method incorporate it in the pudding mix. Otherwise, mix with the electric hand whisk at speed one. Make sure, the pudding mix is still hot, but not piping hot. 

    6. The egg whites should be mixed fully within the pudding mix.

    7. Transfer this into a serving glass or a bowl. 

    8. Cover with a cling film or a foil paper and allow this to set in refrigerator. I refrigerated it overnight.


    Step 8 : Preparation of caramelized nuts or chikki

    To garnish I used cashew, but you can use any dry fruit of your choice like, peanuts, almonds, walnuts, etc.
    1. Heat two tablespoons of sugar and one tablespoon of water in a thick bottomed pan over medium flame.

    2. When it attains a nice golden color immediately add eight to twelve cashews, chopped and one tablespoon ghee. Mix well and switch off the flame.

    3. Transfer and spread this on a butter paper. Let it come to room temperature.

    4. Then grind it coarsely either with your hands or using a mortar and pestle.


    Step 9: Garnishing

    Once the pudding sets completely, we can garnish it. 
    1. Put caramelized nuts on top and serve.

    2. I have used some mint leaves, cherries and sugar glass for garnish. These ingredients are optional. Enjoy.
