    What are tiger prawns?

    Tiger prawns are the large aquatic crustaceans native to Indo -west Pacific Ocean. This large shrimp gets its name from the black stripes, which cover their shells. In Malayalam, we call it 'konju'. It is costly and rare seafood, may be due to its demand in export industries.

    In this Kerala restaurant recipe, the deveined and cleaned tiger prawns are marinated with spicy mix. It is then pan fried in ghee or oil.

    Pan fried tiger prawns

    Preparation time:    minutes | Cooking time:  -- minutes | Total time: --- minutes


    Ingredients

    • 8 tiger prawns, washed and deveined (250 gm)
    • 1" piece ginger
    • 5 to 6 garlic cloves
    • 1 spring curry leaves
    • 2 to 3 shallots, fried and caramelized
    • 1/2 tsp red chili powder or to taste
    • 1/2 tsp Kashmiri red chili powder (optional)
    • 1/4 tsp turmeric powder
    • 1/2 tsp pepper powder
    • Lime juice as needed
    • Water if necessary
    • 2 tbsp coconut oil
    • 2 tbsp butter

    Preparation of tiger prawns with step by step photos

    1. To make the tiger prawn skewers, I used 8 medium sized tiger prawns. Before use I washed the prawns with freshwater for two three times to remove the dirt and debris.

    2. Now it is the time to prep the prawns. Insert one skewer into the prawns carefully. Hold the prawns carefully, start from the tail segment gently push the skewer so that it comes out without damaging or breaking the prawn.

    3.  Leaving the head and tail segments, remove its exoskeleton and legs carefully with your hands.

    4. Now make a shallow slit on the top side of the prawns with a knife.

    5. Devein it.

    6. Repeat the process and prepare the remaining prawns also.

    7. Take a mixer jar, put garlic, ginger, fried onions, turmeric powder, chili powder, pepper powder and salt. Squeeze half portion of a medium lemon.

    8. Grind smoothly.

    9. Apply this paste on the prawns and refrigerate for next two hours so that the spices infuse into the prawns carefully.

    10. After the resting period, pour oil and butter in a hot pan.

    11. When the butter melts fully, place the prepared prawns one by one. Keep the flame medium or low.

    12. When one side is done, flip the prawns carefully.

    13. Close with a lid and cook till the prawns are done. 

    14. The juices will ooze out of the prawns first, then will evaporate and the prawns will turn crisp. 



    15. Once crisp, transfer to a serving plate and serve with green chutney.

    16. Enjoy.
