    Cream of tomato soup or tomato soup is a refreshing, tasty and rich Indian style soup which utilizes fresh, ripe and soft red tomatoes as its main ingredient. It is a fast moving soup item in most of the Indian restaurants. In India, soup is served as an appetizer or starter. 


    The cream of tomato soup utilizes fresh and ripe tomatoes which is not only necessary for its taste but also contribute beautiful red or light orange color naturally. The rich creamy texture is from the addition of cashews and fresh cream.

    1. Try to use fresh, ripe, less tangy and bright red colored tomatoes for balanced taste and bright color.
    2. Fresh cream and carrots are used for attaining the thick, rich texture and smoothness.
    3. Use of vegetable stock / chicken stock for best taste. 
    4. Taste of the soup depends on the taste of tomato we use, so try to use less tangy ripe tomatoes. 
    5. Be conscious while adding salt. If using salted butter or salted veg / chicken soup, you may not need to add any extra salt.

    Ingredients


    • 4 ripe tomatoes, cubed
    • 1 small carrot, cubed
    • 1 small onion, peeled and chopped
    • Pepper corns to taste
    • 3 to 4 garlic cloves
    • 2 bay leaves
    • 1.25 cups veg or chicken stock
    • Salt to taste
    • Sugar to taste
    • 1 tbsp butter / olive oil / sunflower oil

    Preparation Of Tomato Soup With Step By Step Photos


    1. Heat one thick bottomed pan over medium high heat. When hot reduce the flame to low. Put unsalted butter.

    2. When the butter melts, add two bay leaves.

    3. Further put one finely chopped onion, garlic cloves and peppercorns.


    4. Sauté till the onions turns translucent.

    5. Now you can add the chopped tomatoes and carrots. 

    6. Mix well. Cover with a lid and cook over medium flame till the tomatoes turns soft.

    7. Discard bay leaves.

    8. Transfer the tomato mix in a mixer grinder.

    9. Grind smoothly.

    10. Sieve through a strainer to remove the tomato skin and big pieces.

    11. Pour Chicken / Vegetable stock. 

    12. Add salt if required. Then put a pinch of sugar to balance.

    13. When starting to boil, add fresh cream and mix well.

    14. Cook the soup in simmer till it attain the desired consistency.

    15. Enjoy.
