    Steamed cakes are those cakes which are cooked in a steamer. The cooking equipment can be an idli pot, rice cooker or a bamboo steamer. So obviously, it is a no oven cake recipe. These cakes are normally much more soft and moist than regular oven baked cakes.

    When we talk about the steamed cakes, I think it will be necessary to explain the pros and cons of a steamed cakes along with this post. I started making steamed cakes when my first oven has stopped working. I love its taste, but always I feel the steamed cakes provide a much moist and chewy texture with lesser shelf life compared to the regular cakes. It resembles a pudding rather than a cake. These cakes won't have that outer brown curst which regular cakes provide, so naturally it will have lesser flavor. Steamed cakes takes a lesser cooking time compared to the regular cakes but the cakes also loose its moistness or dries out faster when it rest.

    To make the steamed chocolate cake recipe, regular creaming method is followed. The butter and brown sugar is creamed with eggs and vanilla essence till soft and fluffy. Then the flour and leavening agents are folded in and steamed till cooked. When the cake has come to room temperature, it is frosted with regular chocolate butter cream.

    1. Demerara sugar or brown sugar has larger crystals compared to regular castor sugar. It will need more moisture to melt. Do beat the butter and sugar till almost done. Then put the eggs and continue the beating process. The sugar will melt utilizing the liquid content of eggs.
    2. Add the flour, only after the sugar completely dissolved.
    3. Steaming in idli cooker is not an easy process. It requires close attention. You will need to add water in the idli pot in between to avoid burning.
    4. Use a good quality steamer. If the steam is escaping, then will need extra cooking time.
    5. Use all the ingredients at room temperature, especially the egg, milk and butter.

    Is steaming is better than baking?

    Baking is the best options for cakes. Still, if you don't have an oven, you can go for steaming. The steamed cakes takes lesser cooking time and gives evenly and perfectly cooked cakes. The outer hard crust won't be formed and also the cakes will be much softer and moister than the regular baked cakes. If you are looking for the bakery style cakes, then steaming is not a good option.

    Why my steamed cakes are not fluffy?

    For soft and fluffy cakes, the proper beating is necessary. If the sugar and eggs are properly whisked or air incorporated, then you will get soft and moist cakes.

    Soft and moist chocolate cake with butter cream frosting

    Ingredients


    For Cake batter
    • 1 cup all purpose flour or maida (144 gm)
    • 105 gm dark chocolate
    • 1/4 cup  / 4 tbsp  / 60 gm Unsalted room temperature butter
    • 1 cup 185 gm demerara sugar / brown sugar
    • 2 eggs (medium sized at room temperature)
    • 1 tsp Vanilla essence
    • 1/4 cup milk at room temperature
    • A generous pinch of salt
    For chocolate butter cream Icing
    • 90 gm unsalted butter at room temperature
    • 1/2 cup/ 160 gm icing sugar
    • 4 tbsp cocoa powder
    • 1/3 cup whipping cream / fresh cream / milk
    • 1 tsp vanilla


    How to make Chocolate Cake In an Idili Cooker / Steamer





    Preparation of steamed chocolate cake with step by step photos

    • Take unsalted room temperature butter in a mixing bowl and add Demerara sugar. 

    • Cream butter and sugar using an electric whisk at speed 1 in the beginning. Then increase to high. Do scrape sides in between.

    • Once the sugar and butter is almost done, add one egg. Beat well till the egg combined.

    • Then add the second egg and vanilla essence. Whisk again.

    • Microwave the dark/milk chocolate in microwave for one minute.

    • Mix well till it turn smooth. 

    • Pour into the mixing bowl.

    • Whisk again till everything well combined.

    • Meanwhile, swift all purpose flour/Maida, cocoa powder, baking powder and salt through a sifter. 

    • Add sifted dry ingredients and milk in the mixing bowl. 

       
    • Beat at speed one till the flour incorporated. Do check the batter with a spatula for unmixed dry ingredients. If any, mix again.

    • Transfer into a greased and dusted 6" baking tin. 

    • Tap two three times to level the batter and remove the air bubbles.

    • Cover baking tin with a foil paper.

    • Place the tin in the steamer.

    • Close with the lid and steam in a steamer for 60 to 75 minutes or till the toothpick come out clean.

    • To make the chocolate butter cream,  take unsalted butter in a mixing bowl. 

    • Beat with the electric whisk till the butter turns soft and fluffy.

    • Swift icing sugar and cocoa powder into the bowl. 

    • Pour half cup room temperature whipping cream also.

    • Mix well till everything well combined.

    • Frost the cake with the prepared icing and serve chilled.

    • Enjoy.
