Lubikka uppilithathu is a spicy, sour and salty preservation method of Kerala where the Indian plum or Indian scam plum is preserved with spices. It is a quite a usual method of preservation, but highly inviting. Let's discuss today, the method of preparation of lubikka uppilittathu.




    Lubikka - About


    Lubikka or loovikka are small red colored berries found in Kerala. It is also called lololikka in some area. These translate to Indian plum or Indian scam plum in English. Two varieties are available, sweet and sour. Sweet lubikka is used to make vines and jams where are the sour one is suitable for salting and pickling.

    Lubikka plant is usually a small tree on which the lubikka fruit bloom in clusters. The plant which we have in our native, blooms three times in an year. This year, when we reached home for vacations, it was the blooming time. The  nature has beautifully decorated the plant with this cute little red plums. Many birds and squirrels are the regular visitors of this tree to enjoy nature's feast. When we returned  to Chennai, we brought some lubikka to make a few dishes with it. This is the first one, all the other recipes will come soon..



    Uppilittathu - What is it

     

    'Uppilittathu' is a popular preservation method we follow in Kerala. It is a type of salting where the vegetables/fruits are soaked in high concentration salt water. The word 'uppilittathu' in Malayalam stands for salting. Many spices such as chilies, pepper, garlic, ginger, etc., will be used along with the fruit/vegetable to increase its taste depending on the nature of the fruit/vegetable used. Salted gooseberries, mangoes, guava are some common items with street vendor in Northern Kerala. 


    Lubikka uppilitathu - About


    The lubikka uppilitathu preparation starts with the cleaning of the lubikka. It is then filled in a clean glass bottle with spices and sufficient amount of salt water. Keep it in that condition for a few days before use so that the fruit absorb considerable amount of flavors and taste of the other ingredients. 



    Lubikka uppilittathu - Expert's Tips

    1. Try to use fresh lubikka for salting. Ripe ones give better taste and softness. 
    2. The lubikka should be cleaned thoroughly with fresh water before use. Do remember to remove excess moisture either by pat drying with a clean cloth or by keep in a colander for a few minutes.
    3. The water level should come above the fruit so that the salt water act as a barrier between the atmosphere and the fruit.
    4. You can try this recipe with or without the spices. 
    5. The water should be rolling hot while you add.
    6. Use glass or ceramic bottles to store. Plastic bottles are not recommended.

    My kids love to munch this yummy salted plums without any accompaniments. But people serve it with steamed rice or kanji.

    Salted Indian scam plum

    Preparation time: 10 minutes | Cooking time: 3 minutes | Total time: 13 minutes



    Ingredients


    •  250 gram ripe lubikka / loovikka / lololikka / Indian scam plum
    • 3 to 5 green chilies
    • 1 small bulb of gralic, cleaned
    • 2 tbsp salt or salt to taste
    • 2.5 cups of water



    How To Make Lubikka Uppilittathu




    Lubikka Uppilittathu Preparation With Step By Step Photos


    1. Wash the lubikka thoroughly in fresh water to remove the dirt and debris. You can also prick its stalk if you prefer. Keep this on a colander to remove extra water. 

    2. In a saucepan, heat 2.5 cups of water. 

    3. Further transfer the cleaned lubikka into a clean and neat glass or ceramic bottle.

    4. Also put some green chilies, garlic and salt to taste.

    5. Once the water comes to a rolling boil, immediately transfer into the bottle. Note : To avoid cracks on the bottle, place one clean steel spoon in it. 

    6. Once it comes to room temperature, cover with a clean cloth or with its lid. Set aside. You can use it three days after preparation.

    7. Enjoy.
