Payasam prepared with ada will be the first choice of Kerala people  almost in every special occasions like marriages, Onam, Vishu, birthdays, etc.  Let's discuss today the preparation of instant palada payasam without the payasam mix.




    What is palada pradhaman?


    Palada and adapradhaman is a rich and delicious dessert of Kerala. It is served as an after-meal dessert in Kerala sadya. 


    The main ingredients of this payasam are small square shaped rice flakes. These rice flakes are called ada. Traditionally, the ada was prepared by steaming thin batter of raw rice on banana leaves. It is then cut into small cubes and used in payasam. Now a days, different brands of ready to cook palada is available in the market. 


    Traditional way of palada preparation is laborious and time consuming process. If needs hours of standing and continuous stirring. The ada is first simmered in milk and sugar in a thick bottomed pan (uruli). It is then  flavored with ghee and cardamom powder. Finally served with ghee fried dry fruits.


    Today, we have a quick and easy payasam recipe. It needs only a short time of twenty to thirty minutes. But the taste is exactly like the traditional pink palada pradhaman. 



    Palada Pradhaman - Expert's Tips


    1. Soaking the ada is the first step of making instant palada pradhaman. The ada will be soaked in hot piping water so that the dry store-bought instant ada turns soft by absorbing water.
    2. Do cook the ada in milk. Once the ada turns completely soft, then only add sugar. The sugar will prevent the cooking of ada and will make it hard.
    3. I have used caramel in this recipe in order to get the natural color and taste of palada instantly.

    Rice flakes simmered in milk and sugar

    Preparation time: 10 minutes | Cooking time: 10 minutes | Total time: 20 minutes


    Ingredients


    • 1/4 cup instant ada 
    • 1/2 cup milk
    • 3 tablespoons of sugar
    • 1/4 teaspoon cardamom powder
    • 1/2 teaspoon boost
    • 100 gms of condensed milk
    • 5 to 6 cashew nuts
    • 5 to 6 raisins
    • 1 tablespoon ghee
    • Water as required

    Preparation of palada pradhaman with step by step photos


    1. Take ada in a bowl. I used store bought or ready made dry ada.

    2. Pour piping hot water and let it sit for ten minutes so that the ada absorb water and turn soft. 

    3. Once the ada turns soft, transfer it into a thick-bottomed pan in which you are planning to prepare the palada pradhaman.
    4. Pour one and a quarter cup of milk and let it boil. 

    5. Meanwhile, we will prepare the caramel. Take three tablespoons of sugar and 1 tsp water in a pan. Heat on medium high heat.

    6. When the sugar comes to a beautiful golden color, pour remaining portion of milk (hot milk) and mix well.
    7. Check whether the ada is soft or not. Either press between your fingers or chew it. Once the ada has cooked fully, you can add the prepared caramel. 

    8. Mix well and let it boil. When the payasam reduced to 3/4, add condensed milk and mix well. Check the payasam, add more condensed milk or sugar if required.

    9. Further put cardamom powder and boost. Mix well. The boost will balance the taste of palada and cardamom powder is for flavor.
    10. Mix well and switch off the flame. Put ghee fried dry fruits. Cover the lid and let it sit for five to ten minutes.

    11. Then serve and enjoy.
