 Chicken uruval is a delicious starter of Karnataka. A very simple and delicious chicken preparation. I tasted this recipe during our Mangalore days. A really aromatic and spicy chicken preparation, which my family always love to have. Let's discuss today, the preparation Chicken uruval. 




    What is chicken Uruval 


    Chicken uruval is a well-known Karnataka cuisine. It can be served as a starter as well as a side dish. Chicken uruval is prepared by cooking the chicken pieces in spicy and aromatic cashew based spicy gravy. It is then semi-dried and tempered. Garlic and garlic are not necessary for this dish, but if you like you can include some. 


    Chicken uruval - Tips

    1. Chicken uruval is prepared in cashew based spicy and smooth paste. Do include chilies to your tolerance while preparing the gravy. 
    2. While cooking the urual, keep the flame low to medium and stir in between to avoid sticking to the bottom. As the curry paste is cashew based, so there is a high chance of it to stick and burn.
    3. Chicken uruval is a dry preparation. After the curry preparation, the chicken pieces will be beautifully coated with the curry paste. Do dry the dish, then only you will get the typical Mangalore restaurant style taste.

    Chicken uruval is a starter or appetizer. But it is delicious with ghee rice, chapati, rice, etc.

    Chicken simmered in spicy cashew paste

    Preparation time : 1 hour | Cooking time: 20 minutes | Total time: 1 hour 20 minutes



    Ingredients 


    To marinate
    • 500 gm chicken, cut into small pieces
    • 1/4 tsp turmeric powder
    • 3/4 tsp cumin powder
    • 1/2 tsp chili powder
    • A few drops of lemon
    • Salt to taste
    To grind

    • 8 to 10 dried red chilies
    • 10 to 12 cashew nuts
    • 1 large onion caramelized
    • Hot water as needed
    Other Ingredients
    • 1.5 tablespoons coriander seeds
    • 3/4 teaspoon garam masala
    • 2 tbsp cashews
    • 2 springs of curry leaves
    • 6 dried red chilies
    • 1.5 tablespoon butter
    • 1/4 cup oil for frying the onion
    • A pinch of sugar

    How To Make Chicken Uruval


    Chicken Uruval With Step By Step Preparation


    1. Wash and clean the chicken and transfer into a bowl.

    2. Put turmeric powder, chili powder, cumin powder, salt and lemon juice. 

    3. Marinate well and set aside for one hour.
    4. Meanwhile, put red chilies and cashews into a small bowl.

    5. Pour piping hot water and set aside for ten minutes.

    6. Meanwhile, peel the skin off and slice one large onion thinly and make caramelized onions and set aside. 
    7. After frying the onions, in the same oil, fry cashews, dried red chilies and curry leaves. Set aside.

    8. Transfer the soaked spices into a mixer jar. Put caramelized onions and some water.  Grind into a smooth paste and set aside.

    9. Remove extra oil from the pan and put butter. Once the butter melts, put the prepared chili-cashew paste and coriander powder.

    10. Sauté till the oil separates.

    11. Further put the chicken pieces  and mix well.

    12. Cover the pan with its lid and cook over high flame till the juices leaves from the chicken. Then reduce the flame and cook till the chicken cooked completely.
    13. Open the pan and put garam masala. cook over medium heat with intermitted stirring till the gravy thickens and coat the chicken fully. 

    14. Serve with the fried cashews, curry leaves and red chilies.

    15. Enjoy.
