    What are soya Chunks?


    Soya chunks are the deflated soya flour, which left after the extraction of soybean oil. It is also known by various names such as soya nuggets, meal maker, soy meat, soya vadi and vegetarian meant. They are high in protein (almost 52 grams in every 100 grams) and can be cooked just like any non-veg dishes and express almost similar taste and flavor of a meat counterpart. It can be roasted, fried, curried with any spices. Soya beans will be the correct choice for vegetarians to maintain their protein intake.


    Soya Chunks Roast - About


    Soya chunks roast is a highly aromatic spicy side dish where the soya chunks are prepared with onion, tomato and other dry spices. This is a typical Kerala dish where the coconut oil, curry leaves and garam masala is used for flavoring. 


    I am not that fond of soya nuggets and preparing it after a long gap. I used to make one or other dish with soya chunks at least one or two times in a month after my marriage. Don't know why gradually we stopped eating soya. But last day, when I saw soya chunks in my nearby supermarket, I picked one small packet and prepared for dinner. It comes out well and everyone loves it. Today, I am sharing the same recipe with you.


    Making soya chunks roast is so quick and easy. The soaked and cleaned soya is pressure cooked with onion, tomato and other spices. It is then seasoned with coconut oil, mustard, curry leaves, red chilies etc. This delicious dish can be served for lunch or dinner. But consuming soya chunks in regular basis is not good for health.     Soya chunks Roast Recipe - Tips And Tricks


    1. Soaking the soya nuggets is absolutely necessary to make it soft. Soya chunks have a rough and dry texture and not healthy using them uncleaned. 
    2. Squeeze the soya after washing otherwise it will not absorb the spices.
    3. This same recipe you can make gravy, I tried for dry soya side dish, so I put water just enough to pressure cook them. If looking for a gravy style soya curry, then add one and half cups of water while pressure cooking.

    As I already said in the intro section, soya chunks are the meat substitute and can be easily incorporated into any meat recipes. You can serve soya chunks roast with rice, chapati, porotta, naan, roti, poori etc.

    1. Are soya chunks healthy?

    Soya chunks are good for bone, skin and hair health. It can lower the level of blood cholesterol and thus prove to be good for heart health. It also prevents prevent accumulation of fat around the organs. Soya chunks are protein rich and will keep you feeling full a for a long time. 


    2. Should soya chunks be soaked before cooking?

    Dry soy has a very rough texture. It needs to be soaked in water before use.

     


    3.How long do soya chunks need to be soaked?

    Overnight soaking is necessary to make the soya chunks soft. If you forget to soak them, don't worry, put the chunks in piping hot water and leave it for ten minutes. The chunks will absorb water gradually and will turn soft. After ten minutes, transfer into a bowl with cold water, then clean them two to three times in fresh water, squeeze  to remove the extra water and then use.


    4.What is the side effects of soybean?

    Consuming excess amount of soybean is not good for health. These are filled with estrogen and can cause hormonal imbalance. Overeating of soya chunks may cause water retention, constipation, acne and bloating. 


    5. Can we eat soya bean without boiling?

    Eating raw or uncooked soya bean can cause stomach disturbances as well as long-term health issues. Proper cooking of soya chunks reduces this problem.


    7. What are the advantages and disadvantages of soya chunks?

    Advantages : Soya chunks are good for bone, teeth, hair and skin health, helps in weight management and helps in weight management.

    Disadvantages : Excess use of soya chunks can increase uric acid level which is not good for our liver health. Can increase estrogen and reduce cholesterol level in our body.

    Spicy Soya Nugget Kerala Style

    Preparation time: 10 minutes | Cooking time: 15 minutes | Total time: 25 minutes



      

    Ingredients

    • 75 gm soya chunks
    • 1 medium sized onion, peeled and sliced
    • 1 medium size tomato, sliced
    • 2 to 3 green chilies
    • 1" piece ginger, peeled and chopped
    • 6 to 8 garlic cloves, peeled and halved
    • 1/2 teaspoon turmeric powder
    • 3/4 to 1 tsp red chili powder
    • 2 tbsp turmeric powder
    • 1/2 tsp garam masala
    • Salt to taste
    • 1 teaspoon vinegar
    • 1/2 cup water + water as needed

    To temper

    • 3 tbsp coconut oil
    • 3/4 teaspoon mustard seeds
    • 1 teaspoon cumin seeds
    • 3/4 teaspoon black pepper
    • 3 cardamom
    • 1" piece ginger
    • 3 cloves
    • 2 springs curry leaves
    • 4 to 5 dried red chilies



    How to make Kerala soya chunks roast




    Preparation of soya chunks with step by step photos

    Step 1: Soya Chunks processing

    1. Take soya chunks in a bowl. I used 1.5 cups soya bean which weighs about 75 grams.

    2. Add boiled water and let it sit untouched for the next ten minutes. It will absorb water and will turn soft. 

    3. After ten minutes, transfer the soya beans into cold water.

    4. Wash two to three times and squeeze it to remove excess water. 



    Step 2: Cooking the Soya chunks 


    1. Transfer the cleaned and the squeezed soya chunks into a pressure cooker. Add roughly chopped onion, tomatoes, ginger, garlic and green chilies.

    2. Put turmeric powder, chili powder, coriander powder, garam masala and salt.

    3. Add 1/2 cup of water.

    4. Mix well.

    5. Close with the lid and pressure cook it for two whistles on high flame. Then switch off the flame and wait till the pressure settles.





    Step 3 : Tempering and final cooking

    1. Heat three teaspoons of coconut oil in a pan. 

    2. When the oil turns hot, put mustard seeds. If the oil is hot enough, the mustard seeds will start crackling.

    3. As soon as the crackling sound stops, put cumin seeds, cardamom, clove, cinnamon and black pepper. Sauté for a minute.

    4. Put curry leaves and dried red chilies.

    5. As soon as the spluttering stops, put the cooked soya chunks and mix well.

    6. Let it cook over medium flame till the soya turns dry. Stir in between to avoid burning.

    7. Serve with rice, chapati etc. Enjoy.
