There are so many ways to make mutta thoran, but here we have a quite healthy version, as it contains protein rich egg and vitamin and minerals rich vegetables. Carrot, beans, cabbages are the commonly used veggies, but you can incorporate any vegetable of your choice.
- While making the pachakkari mutta thoran, never mix egg with vegetables as we do while making omelets. Each vegetables will have different cooking points and should be cooked or softened before the addition of vegetables.
- Also, all the vegetables will have a different cooking point, cook them accordingly. The vegetables should turn soft but without losing its natural crunchiness.
- I have put salt while mixing the egg and also while cooking the vegetables. Salt should never overpower.
- Cook the egg at low or medium temperature and do stir continuously so that you get the perfect scrambled egg.

Scrambled eggs with vegetables

Ingredients
- 5 medium sized eggs
- 1 small carrot, peeled and finely chopped (1/4 cups)
- 2 to 3 beans, finely chopped
- 1/2 cup cabbage, finely chopped
- 1 onion, peeled and finely chopped
- 2 to 3 green chilies, finely chopped
- 1/2 teaspoon pepper powder
- 2 springs of curry leaves
- 3 to 4 tablespoon coconut oil
- Salt to taste
Pachakkari mutta thoran with step by step photos
- Break all the five eggs in a mixing bowl.
- Put a pinch of salt and pepper powder. Remember, we have to use salt while cooking the vegetables. So use only a pinch at this stage.
- Mix well and set aside.
- Heat one wide bottomed kadai, pour coconut oil.
- When the coconut oil turns hot, put onion, green chili, curry leaves, and ginger. Sauté till the onion turns translucent.
- Now add French beans and carrots. Sauté over medium flame till soft.
- Further put cabbages and continue cooking till the cabbages turns soft.
- Reduce the flame to medium or low and pour the prepared egg pepper mix.
- Mix immediately and stir continuously till the eggs scrambled well and perfectly cooked.
- Serve with rice and enjoy.
