Veg mayo sandwich  with step by step photos and video - veggies sandwiched between bread

The veg mayo sandwich is a quick and easy recipe, made with vegetables, mayonnaise and bread. In my last post, I explained the method of making mayonnaise and this post is a continuation of that.  You can use any type of vegetables of your choice.  Vegetables like carrots, cabbage, capsicum, lettuce etc, can be used for this recipe.

    What is veg mayo sandwich is made of?

    Veg mayo sandwich is an quick and easy recipe. Bread, mayonnaise and vegetables are its main ingredients. You can make this dish with store bought and homemade mayonnaise. I have shared the egg mayonnaise recipe a few days before. If you don't want to include eggs in your diet, then try with veg mayonnaise.

    Veg mayo sandwich - tips

    1. Both sweet and sandwich bread can be used for this recipe.
    2. Do remember to squeeze and remove extra moisture from the vegetables before use. Otherwise, the bread will turn soggy. 
    3. Also, as I already said in my last post, this is a fast food recipe, make and eat during the same day. The egg used in mayonnaise gets contaminated very fast, so care should be taken.

    Quick and tasty sandwich with mayonnaise and vegetables

    Preparation time: 30 minutes | Cooking time: 0 minutes | Total time: 30 minutes


    • 6 slices of sandwich bread
    • 1 cup cabbage, finely chopped
    • 3/4 cup grated carrots
    • 1 cup onion, finely chopped
    • 1/4 cup sweet corn kernels
    • 1/4 cup tomato, chopped finely
    • 21/2 tbsp mayonnaise
    • 1/2 tsp pepper powder
    • Salt as needed

    • To make the veg mayonnaise sandwich, take all the finely chopped vegetables (onion, cabbage and carrots) except tomato and sweet corn kernels in a bowl. All the veggies have so much water entrapped in and this will spoil the bread and we need to remove this water before mixing with mayonnaise. Put some salt and mix well. With time, the veggies will start to release water, so leave it for next ten to fifteen minutes. 
    • After fifteen minutes, squeeze and remove all the water form it and transfer the veggies into another bowl. You can discard the water that comes out from the veggies. 
    • To this, now we can add the corn kernels and finely chopped tomatoes. But the tomatoes should be chopped only after removing the inner watery portion. Removing this inner portion of tomatoes will also help to retain the bread intact for a long time.
    • Now we can add mayonnaise and half teaspoon pepper powder. If you already put pepper while preparing the mayo, should not add at this stage. Do not add more quantities of mayonnaise especially, if are not consuming immediately. 
    • Mix well and keep aside.
    • Trim all sides of bread and remove the brown hard portions carefully. I prefer sandwich bread for this recipe to get the exact taste, if not available, you can use brown bread or sweet breads. Then spread the mayo veg filling evenly over it.
    • Then put another piece of bread over it, press gently. 
    • The mayonnaise sandwich is ready, cut into equal halves.
    • Serve immediately. Do not keep it for the next day.
