 NanKhatai is an Indian style homemade biscuit which is crisp and smooth with a really pleasant aroma aroma. This is a quick and easy biscuit recipe which I always love to make for my kids. Let's learn today, the preparation of nankhatai.




    What is nankhatai?


    Nankhatai is an Indian biscuit. People surely make these biscuits during many happy occasions like birthdays, small gatherings, etc. It is a veg biscuit recipe and can be made vegan too. 

    The main ingredients of nankhatai are all purpose flour, ghee and sugar. If you are looking for a pure white colored nankhatai, you have to use oil/vanaspati instead of ghee. But remember, the ghee not only built its texture, but also flavor it. 

    In this recipe, I have used some gram flour and semolina also. Gram flour is optional, you can replace it with the same quantity of maida / all purpose flour. Semolina (sooji / rava) is to introduce a nice crispiness in the biscuits. 

    Previously, people used to make these biscuits in idli pots or thick bottomed pans on the gas stove. But we bake the biscuits in OTG ovens also.



    Nan Khatai - Tips and Tricks


    1. Maida, ghee and sugar are the major ingredients of nankhatai. But you can make this vegan by replacing the ghee with any type of vegetable oil.
    2. In order to reduce the consumption of maida, I have incorporated some gram flour (besan / kadalamavu), it not only built its texture but also affect the aroma of the biscuits. You can replace or reduce the amount of gram flour with an equal amount of maid, if you prefer.
    3. The consistency of batter does affect, the texture of the biscuits. In this recipe ghee / oil / room temperature butter is used to make the batter. No water should be used and make a soft, thick and non-sticky dough.
    4. Cardamom powder is the flavoring agent in this recipe. This is a must ingredient to recreate the authentic Indian nankhatai.
    5. The biscuits will be soft immediately after baking, but don't worry, it will turn hard when it cools.

                                           Indian cardamom biscuits                              

     Preparation time: 5 minutes | Cooking time: 12 minutes | Total time: 17 minutes


    Ingredients

    • 1 cup maida
    • 1/2 cup gram flour 
    • 3/4 cup sugar
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon cardamom powder
    • 1/2 cup + 1 tablespoon ghee
    • A pinch of salt


    Step by step preparation of nankhatai


    1. Take maida, gram flour, sugar, baking powder, cardamom powder, and salt in a bowl. 

    2. Mix well and put ghee little by little.

    3. Make a soft and thick dough.

    4. Divide the dough into equal sized balls. No need to flatten the balls.

    5. Place it on a lined baking tray, make a plus sign on top with a toothpick or with the back of a spoon. 

    6. Then put a pinch of chopped nuts in the impressions.

    7. Bake in a preheated oven at 170 degrees for 12 to 15 minutes. After baking, let it come to room temperature. Then can store in air tight containers.

    8. Use as desired. Enjoy.
