Candy's are the highly demanding
food items in our house. Kids are always demanding for one or another type of
candy. Marshmallow is one such candy with which my kids in love. You all
know about marshmallow candy. It a is a soft and jiggly candy made by emulsifying sugar
and gelatin. It is a very simple recipe. Why don't us try marshmallow in our
Kitchen. Today we have a simple homemade marshmallow recipe, try it.
What is a marshmallow?
Marshmallow is a type of soft
candy made with sugar and gelatin. Classic marshmallow uses corn syrup, but
corn syrup is not as easily available everywhere. So let's make marshmallow
without corn syrup. Avoiding corn syrup does not make any big
difference in its flavor or texture, this recipe gives exactly the
same texture and taste of store bought marshmallows.
The marshmallow was supposed to be
invented in Egypt (according to wiki) from the roots of the marshmallow plant. The
marshmallow sap is boiled with a sweetener till solid. Due to the intense labor
cost, the confectioners later replaced the marshmallow sap with gelatin
or agar agar.
Here in this recipe, we use gelatin
and sugar. The soaked gelatin is first boiled with sugar, which is later beaten
till thick and form a soft solid.
Marshmallow - Expert's Tips
- Traditional marshmallow or the
confectioner's marshmallow uses corn syrup, but in this recipe we
skip that ingredient. It is marshmallow without corn syrup.
- The consistency of sugar syrup is very important. Make
sure the sugar syrup is at soft ball consistency, before you put gelatin.
- The sugar-gelatin mix should be whipped till ribbon
consistency. Then only we can achieve soft and chewy marshmallows.
- Traditional marshmallow or the
confectioner's marshmallow uses corn syrup, but in this recipe we
skip that ingredient. It is marshmallow without corn syrup.

Ingredients
- 2 tbsp gelatin
- 1/4 cup + 1/3 cup water
- 1 cup + 1/4 cup table sugar
- 1/4 cup cornflour
- 1 teaspoon vanilla essence
- A few drops of food color
Marshmallow Preparation With Step By Step Photos
- In a small mixing bowl, put 2 tbsp (20 gm) gelatin
powder.
- Pour 1/4 cup water and set aside. The gelatin will
absorb water and will form a lump. We will get a grainy thick lump of
gelatin.
- Into a mixer jar, put 1/4 cup sugar.
- Grind finely.
- Transfer the powdered sugar into a small bowl and put
1/4 cup cornflour. Mix well and set aside.
- Take a small tin. Grease with any odorless oil and dust
with cornflour and sugar mix. Set aside.
- In a thick bottomed pan, put one cup sugar. Pour 1/3
cups water.
- Melt over medium flame till it attain soft ball
consistency.
- Add the gelatin and mix well.
- The gelatin will melt and will start to form a white
bubble as it boils.
- Transfer the entire content into a mixing bowl. Beat on high speed, till it double in volume and form
soft peeks.
- Add one teaspoon vanilla essence.
- Continue beating until you get a ribbon like texture. Transfer half of the prepared mixture into the prepared
bowl or baking tin. Level it by tilting the tin / bowl.
- In the remaining sugar mix, add food color of your
choice. I used purple color (2 drops).
- Beat for thirty seconds.
- Immediately transfer into the tin (above the first
layer).
- Refrigerate it for one hour. Then sprinkle the cornflour and sugar power through a sieve.
- After one our separate the sides carefully with your
hand.
- Then cut into desired shape using a knife. Remember to dust the knife with cornflour and sugar mix before use. Dust the chopped pieces with cornflour and sugar mix.
- Store in air tight container and use. Enjoy.
