    Dal Roti - About


    A dal roti, also known as a dal chapati is a healthy Indian breakfast dish prepared from wheat flour, pigeon peas, herbs and spices. It is a tastier version of traditional Indian breakfast, the chapati. The word dal roti refers to the presence of dal or pulse in this roti or pancake. In Hindi, the pigeon pea is known as toor dal, in Malayalam as tuvara parippu, and in Tamil as thuvaram parippu. It is not necessary to use the pigeon peas, if you don't have toor dal or pigeon peas, you can use split green gram. 


    The preparation of dal roti is similar to that of a chapati, but a dal roti is far more flavorful and tasty. The flavor comes from cumin, turmeric, chilies, ginger and the fresh coriander.




    Dal Roti - Expert's tips


    1. You may prepare a dal roti with any type of dal or pulse. However, I recommend using pigeon peas or toor dal. Moong dal(spilt green gram / cherupayar parippu) is another option.
    2. Make sure you only add enough water to cover the dal while it's cooking. If you add more water, the proportion of pulse and flour will change and it will also lose its flavor.
    3. The dal should be cooked until it is mushy, with no firm parts remaining. 
    4. For this dish, I used Amul garlic and mint butter. It has a tough saltness to it and adds a pleasant aroma to our roti when used in small amounts. If you can't get it, use ordinary butter or oil instead.


    Serving options for Dal roti


    1. Dal roti and pickle - A dal roti is a dish that combines the flavors of dal with roti. As a result, you can serve it with basic condiments such as a pickle. 
    2. Dal roti and chutney - The dal riti can be served with any spicy chutney. Our spicy and sour tomato chutney is something you should taste.

    How to make dal roti

    Spicy chapati with a dal

    Preparation time: 20 minutes | Cooking time: 7 minutes | Total time: 27 minutes




    Ingredients


    • 1/4 cup pigeon pea (toor dal / thuvara parippu), washed 
    • 2 cups wheat flour
    • 1/2 teaspoon turmeric powder
    • 1/2 to 3/4 teaspoon chili powder
    • 1/2 teaspoon cumin 
    • 1 teaspoon finely chopped ginger
    • 2 tablespoon coriander leaves, finely chopped
    • Salt to taste
    • 1 tablespoon oil
    • Amul butter with garlic and herb or regular butter
    • Wheat flour for dusting



    Preparation of Dal Roti with step by step photos


    1. Wash the 1/4 cup pigeon peas two to three times in fresh water before transferring into a small pressure cooker.

    2. Pour 3/4 cup water and close the lid.

    3. Pressure cook it for one minute over high flame. Reduce the flame to low after the first whistle and continue to cook on low heat for another two whistles. Turn off the flame and wait for the pressure to subside. 

    4. As soon as the pressure goes fully, open the lid and check the dal. The dal should be fully cooked  and it should be mashed easily with your hands.
    5. Transfer into a wide bowl and set aside to cool.

    6. Then put 2 cups of wheat flour.

    7. Further add 1/2 tsp turmeric powder, 3/4 teaspoon chili powder (or to taste), 1/2 teaspoon cumin, 1 teaspoon finely chopped ginger, 2 tablespoons finely chopped coriander leaves and salt to taste. 
    8. Mix well with a spoon or using your hands. 

    9. Further pour water little at a time.

    10. Make a non-sticky soft dough. The dough will be in yellow color at this stage and should be slightly looser than a chapati dough.
    11. Pour 1 tablespoon oil and knead again for thirty seconds. Cover and set aside for the next twenty minutes.

    12. After the resting time, divide the dough into small lemon sized balls.

    13. Dust with wheat flour.
    14. Then roll into a thin disc or chapati. 

    15. Apply some butter or oil. I used Amul garlic and herb, but you can apply regular unsalted butter or oil.

    16. Fold half way through
    17. Then fold it again

    18. Further roll into thin squares. You can trim the edges with a knife to get a perfect squire shaped roti.

    19. Heat one griddle over high flame. When the griddle turns hot, put the roti. 
    20.  When one side is cooked, flip and cook the other side also. You can apply some butter or ghee at this stage for extra flavor. 

    21. Serve hot with any pickle, chutney or any side dish of your choice. Enjoy.
